blue cheese 4 & wings

Made chicken wings tonight, used the Beacon-style fry method: 350 for 2 min, rest for 15 minutes, then 375 for 7 minutes.

Did the blue cheese dip like #3. The recipe below has not been made, but it's been modified as followed for next time:
  • reduced garlic to 1/2 clove; it can be a little pungent
  • reduced parsley to 1/4 tsp, and I grind it with my fingers to make it a powder
  • add a little salt and pepper
Blue Cheese #4 (TBD)

3 tbsp mayo
3 tbsp plain nonfat yogurt
1/2 clove garlic, minced & ground with salt using knife blade
1/2 tsp onion powder
1/4 tsp dried parsley
4 tbsp crumbled blue cheese

Mix with fork to really mash those blue cheese nuggets.

blue cheese 3?

Made chicken wings tonight. Used the Beacon-style fry method: 350 for 2 min, then 375 for 7 minutes. It's like the skin was lacquered, very very crispy. I did dust the skin in a bit of cornstarch, flour, garlic powder and paprika, but not really even noticeably so.

I like the blue cheese dip I made tonight. The yogurt adds nice tang.

3 tbsp mayo
3 tbsp plain nonfat yogurt
1 clove minced garlic
1/2 tsp onion powder
1/2 tsp dried parsley
4 tbsp crumbled blue cheese

Mix with fork to really mash those blue cheese nuggets.

blue cheese dip II

Here's a revised version of the blue cheese for wings. This one adds a little dill (which I've seen in copycat ranch dressing recipes) and onion powder. Also going smaller qty on sour cream, and using mayo instead of yogurt (didn't have plain yogurt)

Blue Cheese Dip II

4oz of mild blue cheese, such as Danish Rosenborg, crumbled
1/4 cup mayo
8oz (1/2 tub) sour cream
1 clove garlic, minced
1/2 tbsp freshly ground pepper
1/2 tsp. thyme, dried
1/2 tsp. oregano, dried
1/2 tsp. onion powder
1/2 tsp. dried dill
1/2 tsp dried parsley
1/2 tsp. kosher salt
1 tsp. white (or white wine) vinegar

Results: immediately, well balanced flavor, slight garlic in the finish, but can taste nearly all the seasonings. May need a touch more salt. We'll see tomorrow, after it is refrigerated overnight.

blue cheese for wings

So I've seen a lot of recipes for blue cheese dressing/dip for chicken wings, and every one of them involves mayonnaise. I tried using Miracle Whip (we didn't have mayo), and I abhor the sickly sweet flavor it provides. Might be fine for sandwiches, not for blue cheese dip.

So after some experimenting, I came up with one that appears to work pretty well.

Blue Cheese Dip

4oz of mild blue cheese, such as Danish Rosenborg, crumbled
1/4 cup plain yogurt
16oz (1 tub) sour cream
2 cloves garlic, minced
2 tbsp freshly ground pepper
2 tsp. thyme, dried
1 tsp. oregano, dried
1 tsp. kosher salt
1 tsp. white (or white wine) vinegar

In a large bowl, mash blue cheese and yogurt with fork. Combine yogurt mixture with remaining ingredients, and stir thoroughly. Adjust salt & pepper to taste. Cover and refrigerate for at least 30 minutes to have flavors blend together. Serve with carrot sticks and fried chicken wings.

FOR NEXT TIME:
try increasing vinegar to 2 tsp or 1 tbsp.
